At Kettle & Cane, every confection starts with the ingredients.

We believe exceptional candy does not require shortcuts. It requires better raw materials, careful preparation, and recipes that allow those ingredients to speak for themselves.

That means real cane sugar instead of beet sugar, glucose syrup instead of high-fructose corn syrup, and thoughtfully selected natural flavors and colors whenever possible. We combine these traditional confectionery staples with ingredients inspired by the landscape and culinary heritage of the Southwest.

The result is candy that feels familiar, but tastes unmistakably our own.

We use real cane sugar as the foundation of our confections because of the clean sweetness and classic character it brings to candy making. From chewy taffy and buttery caramel to crystal-coated gummies and hard candy, it is where many of our recipes begin.

Glucose Syrup

Glucose syrup has long played an important role in traditional candy making.

We favor glucose syrup over high-fructose corn syrup, staying closer to the ingredients and techniques associated with classic American confectionery.

Blue agave nectar brings a smooth sweetness and subtle depth that complements traditional confectionery ingredients beautifully.

We use agave as both an ingredient and a source of inspiration, pairing an iconic desert plant with recipes rooted in old-fashioned American candy making.

New Mexico Red Chile

Few ingredients are more closely associated with New Mexico than red chile.

Its earthy, slightly smoky heat creates an unexpected contrast with sweetness, giving traditional confections a distinctly Southwestern edge.

Piñon Nuts & Pecans

Few ingredients evoke New Mexico quite like piñon and pecans.

Harvested from the native piñon pine, piñon nuts have been part of Southwestern food traditions for generations. Their delicate richness and distinctive toasted flavor bring an unmistakable sense of place to our confections. Pecans tell another distinctly New Mexican story. Grown extensively in the warm valleys of southern New Mexico, they have become one of the state’s signature agricultural crops, prized for their buttery flavor, satisfying crunch, and natural sweetness.

Our approach is rooted in the great American confectionery traditions of the late 19th and early 20th centuries, when candy making was a craft built around kettles, sugar, heat, timing, and experience.

We take those traditions and bring them home to New Mexico.
